Today, olive oil is globally recognized for its benefits and increasingly varied culinary uses. Tunisia is rich in geographic diversity. From the snow-capped mountains in the north to the desert, passing through the olive forests of the plains and the Sahel steppes, and all along the coastline basked by the Mediterranean, no region exists without the king tree: the olive tree.

The Story of The Green Castle
Originally from Kalla Kebira in Sousse, Taieb and his brother Abdullah were so close that they agreed to share the daily tasks of their own households. Taieb took care of educating the children, while his brother handled finding financial resources for both families.
Hand in hand, the two brothers created a stable source of income to support their families; they established a traditional olive oil processing unit and a Hammam near their home.
My father, Khyrallah, was passionate about olive fields, and olive oil was part of his daily life.
During the olive harvest, he would engage in picking the olives and producing olive oil.
In our olive grove, most of our trees are centuries old.
The olive trees are planted about twelve meters apart from each other; this distance allows and at the roots of power, take full possession of the soil and draw the necessary water and mineral elements for their growth.
I would like to be the binder of this family heritage to this small world where one meets various people from different cultures, traditions, and ambitions.
Everyone has one or more goals in their life. I would like to pass on what my parents and grandparents started to do to my successors.
