Olive Oil and Garlic Pasta
• Ingredients:
8 tablespoons of olive oil
3 garlic cloves
Salt and freshly ground black pepper
• Preparation:
Over low heat, warm the oil, add the peeled and finely chopped garlic, and gently heat for thirty seconds.
Mix this garlicky oil with the hot pasta.

Olive oil, garlic, and herbs pasta
• Ingredients:
8 tablespoons of olive oil
3 cloves of garlic
1 tablespoon of fresh parsley
1 tablespoon of fresh basil
Salt and freshly ground black pepper
• Preparation:
Same recipe as pasta with olive oil and garlic.
Add the chopped herbs to the pasta before serving, without sautéing them in the oil.
Olive oil, garlic, and fresh tomato pasta
- Ingredients:
8 tablespoons of olive oil
3 cloves of garlic
2 tomatoes or cherry tomatoes
1 tablespoon of fresh basil
Salt and freshly ground black pepper
• Preparation
Same recipe as the olive oil and garlic pasta.
Peel and dice the tomatoes and let them sit for a few moments in a bowl with a good pinch of coarse salt.
Add the tomatoes and chopped basil to the pasta just before serving. Always without cooking.
You can also add a few pitted black olives, cut into small pieces.
Basil Pesto
- Ingredients
6 tablespoons of olive oil
50 g of fresh basil
1 clove of garlic
1 tablespoon of pine nuts
Parmesan
Salt
Freshly ground pepper
- Preparation
Put all the ingredients except the oil into a blender to obtain a smooth paste.
In a bowl, pour the oil in a thin stream and mix into the paste.
Season with salt and pepper. Add grated Parmesan to taste.
Mix with the pasta.
Leg of Lamb with Olives
- Ingredients
1 leg of lamb
500 g of green olives
3 tablespoons of olive oil
2 onions
2 carrots
4 cloves of garlic
Thyme
Salt and freshly ground pepper
- Preparation
Peel and slice the onions and carrots into rounds.
Rinse the olives to remove excess salt, then pit them.
In a casserole, heat the oil and brown the leg of lamb on all sides.
Add the onions and carrots. Let them brown while stirring.
Pour two glasses of water into the casserole.
Add the peeled garlic cloves and thyme. Season with salt and pepper.
Cover and cook over low heat for about an hour.
Add the pitted olives and cook for another twenty minutes.
Chicken with Olives
- Ingredients
1 chicken
300 g green olives
2 tablespoons olive oil
2 onions
1 preserved lemon
1 tablespoon coriander seeds
Salt
Freshly ground black pepper
- Preparation
Peel and chop the onions. Rinse the olives to remove excess salt, then pit them.
In a casserole, heat the oil and brown the chicken pieces.
Add the onions. Let them brown while stirring.
Cover and cook over medium heat for twenty minutes.
Add the olives, coriander seeds, and the preserved lemon cut into pieces. Season with salt and pepper.
Mix, pour in half a glass of water, and cook over low heat for twenty minutes.
